Apple Nachos & Enjoy Life Seed and Fruit Review

Enjoy Life Foods never lets me down.  Some people think gluten-free, dairy-free, nut-free, completely allergen-free, sounds a bit boring…but ELF is bringing LIFE to allergen-free!  Once again, I have a new product we all loved, and I can use in so many ways.  The Seed and Fruit Mixes are crunchy, sweet and the perfect addition to school lunches and great for snacking on-the-go.  No nuts, only seeds, so no need to worry about nut allergies at home or school!  These snacks will add a little protein, fiber and a little sweetness anywhere you add them!

There are two tasty flavors of Seed and Fruit Mixes:

Beach Bash (shown above on the left)  – Raw Sunflower Kernels, Pineapple, Roasted Hulled Pumpkin Seeds, Cranberries, Apricots.

Mountain Mambo (shown above on the right), my personal favorite — Raw Sunflower Kernels, Roasted Hulled Pumpkin Seeds, Raisins, Dried Apples, Chocolate Chips, Cranberries.

They are producing these delightful snacks at the highest standards.  Not only are all the products made in a entirely allergen-free facility, but the dried fruit is also free from sulfates.  And with all the news lately about GMO’s, you can feel good knowing Enjoy Life Foods has received NON-GMO verification from the Non-GMO Project.

I’ve been able to use the Seed and Fruit Mixes in so many ways.   It’s been in school lunches, a snack on a long bike ride and we had some mixed into air-popped popcorn while watching a movie.

But our favorite were the Apple Nachos.

I sliced the apple to look like doughnuts.  I used a small round cookie cutter for the center, but if you don’t have one just use a knife to cut out the seeds.  Then melted some Enjoy Life Foods chocolate chips over a double boiler.  Once it melted, I used a spatula to drizzle the chocolate over the apples and then sprinkled some Seed and Fruit Mix overtop.

These did not last long around here!

Apple Nachos

Ingredients
  • 2 large apples, cored and sliced horizontally
  • lemon juice
  • 1/4 cup chocolate chips, melted over a double boiler
  • 1/4 cup Mountain Mambo Enjoy Life Foods Seed and Fruit Mix
Instructions
  1. Toss the apple slices in lemon juice, then lay out on a platter
  2. Use a spatula to drizzle melted chocolate over the apples
  3. Sprinkle the Seed and Fruit Mix overtop
  4. Enjoy!
